猪后腿肉的肉质是比较紧致的,相对于前腿肉来说,上面的筋膜会比较少,只是表面一层肥肉,再其他的都是瘦肉,所以后腿肉用来做丸子和炖汤非常适合,因为瘦肉比较偏多,那么在烹饪的时候就容易变柴,为了保证后腿肉的口感,最好是在烹饪之前用料酒腌制一下,这样烹饪出来的菜品才会更加美味。
